Recipe- Over-Simplified Chicken Fried Rice

Hey Cats!

I’ve been in my new home for a little over a week now! I’m really excited to get back to cooking for myself, and to school, which starts today! I started making this recipe last year when I first lived in a real house, and it’s become one of my favorites! And if you’re only cooking for one, it gives you tons of leftovers, so you’ll have lunch or dinner for a few days! The other thing about this recipe is that there aren’t really specific measurements…since I made it up as I went, I didn’t really keep track of those very well! So you can just add ingredients to your personal tastes.

Here’s what you’ll need:

-1-2 cups cooked white rice (you can make a new batch, or this is a great way to use leftovers!)

-1 chicken breast, thawed.

-1-2 cloves chopped, fresh garlic

-Chopped onion (to your taste)

-1 egg

-Frozen peas (a handful)

-Soy sauce (LOTS!)

Here’s what you do:

First, cook your rice. Or if you’re using leftover, it’s even easier!

Next, cut your thawed chicken breast into cubes, and throw them into a large, hot skillet, prepared with cooking oil. Saute the pieces until fully cooked, and browned a bit on the edges.

Then, scoot the chicken to one small section of the pan. Very professional language and technique, I know, but at least you only have to wash one pan! Then, saute the garlic and onion until the onion becomes translucent.

After that, crack the egg directly into the skillet, and scramble it with the onion and garlic. Cook until firm.

Next, add your frozen peas. If you want to add other vegetables such as corn or diced carrots, that would be delicious as well! Stir until they don’t look like they’re frozen anymore, and are a bright green.

Then, mix the chicken in with the rest of the ingredients.

Add in your rice, and your soy sauce, and stir! I would suggest adding the soy sauce in increments, until all the rice is completely brown.

That’s all! Isn’t that super easy? It’s also delicious re-heated- just add a bit more soy sauce, because it gets dry in the fridge! This is a great recipe to make when you don’t know what to make, or when you’re running low on groceries, because you usually have all the ingredients on hand! It’s also great for baby chefs, and it’s really fun when you tell people, “Oh, I make the BEST chicken fried rice” and they’re super impressed. I hope you give this a try!
