Recipe-Chocolate M&M Crinkles

Hey Cats!

I hope you are all having a fantastic week so far! I moved into my new place on Sunday, and one of my roomies is FINALLY coming this afternoon! I’m excited to see her! It’s been a little lonely! Also, we just got the internet and cable installed in our townhome about ten minutes ago, but we don’t have a router yet, so I’m currently sitting in the closet under the stairs, connected to the modem with and ethernet cable. It’s a little awkward.

Anyways, today I’m going to share with you a spinoff of the easiest cookies you will ever make, Princess Pink cake mix cookies. I’ve mentioned that there are millions of ways to make cake mix cookies, and here’s another! These are quite delicious, especially if you love chocolate!

Here’s what you’ll need:

-1 chocolate cake mix

-1 cup mini M&M’s

-2 eggs

-1/2 cup vegetable oil

 

Here’s what you do:

First, mix together in a large bowl the cake mix, oil, and eggs until completely combined. The dough will be quite oily!

Next, mix in the M&M’s until evenly distributed.

Roll into even balls and place 2 inches apart on a greased cookie sheet.

Bake at 350 for 12-14 minutes, or until cookies are firm to the touch.

How easy are these? I love the mini M&M’s, they just take over the batter and you have a little extra chocolate in every bite! You could also try this with other cake mix/add-in combos! I’m thinking maybe strawberry with chocolate chips, yellow cake with heath bits… the possibilities are endless!

Recipe-Chocolate Chip Muffins

Who is excited for the weekend? I know I am, especially since this is the first weekend in probably two months I don’t have plans or have to go out of town, so I’m looking forward to a relaxing weekend at my house. As I have mentioned, breakfast is my favorite meal of the day- I love the variation of breakfast foods, from extra savory to basically dessert. I’m usually fine with cereal on mornings when I have to go to work or school, but lately I’ve just gotten tired of it. Tonight, I told my mother “I am so over my cereal, I’m making muffins.” She’s used to my dramatics, so she just told me to make sure I cleaned up my mess. We didn’t have any fruit I wanted to use, and I didn’t feel like going to the store, so I scoured the cupboard for usable ingredients. I came across mini chocolate chips and vanilla pudding mix, so I decided to see what I could do! I used a basic muffin recipe for guidance, but used my own judgement for most of the ingredients! Here’s what you’ll need:

Dry Ingredients

-1 1/2 cups flour

-1/2 cup granulated sugar

-2 tbsp brown sugar

-1 1/2 tsp baking soda

-1/2 tsp salt

-1 packet of instant vanilla pudding mix

Wet Ingredients

-1/3 cup melted butter

-1 egg

-3/4 cup milk

-3/4 cup mini chocolate chips

Here’s what you do:

First, preheat your oven to 350 and line a muffin tin with paper liners. Next, combine all the dry ingredients, making sure the brown sugar isn’t in clumps (I would suggest using a fork). Then, add your wet ingredients and mix well. The batter should be thick, but still pourable-at first I only added 1/2 cup of milk and it was like cookie dough, so I added more! Finally, stir in the chocolate chips! Pour into the lined muffin tin and bake for 25 minutes or until slightly golden and firm.

These are really dense, yet still creamy from the pudding mix! Also, mini chocolate chips are my new favorite thing because when you bake with them, they just take over the batter and you get chocolate in literally every bite…it’s beyond delicious. I can’t wait to have another one of these in the morning-hopefully I’ll be happier about this than I was my cereal!

Recipe- Lovely Lemon Cookies

Last night, I had a few friends over to watch The Bachelorette. I personally don’t really believe in the show because I don’t think it’s real life, but I love to watch it just to see how it all unfolds! (Can we talk about how Des sent Robert home? Like, please, he was the best.) It’s also one of those shows that’s just fun to watch with friends and hear everyone’s opinions. It’s only the second week, but my friends and I already have a rotation of who is hosting the watch party, and last night was my turn! None of us are chubsters, but we all love to eat, so I decided to whip up a batch of queso and something sweet! I couldn’t decide what to make, but then I remembered the easy, quick, crowd-pleaser that is the cake-mix cookie. You may recall my Princess Pink Cookies from last summer. I decided to stick with the lemon theme, but change it up a bit! I used a lemon cake mix and added lemon juice and orange juice to the mix to give it a little extra flavor!

You will need:

-1 Lemon cake mix

-2 eggs

-2 tbsp lemon juice

-2 tbsp orange juice

-1/4 cup canola oil

Here’s what you do!

1. Preheat your oven to 350.

2. Now we need to talk about measuring the orange and lemon juices and the oil. The original recipe calls for 1/2 cup of oil, but since we’re adding the juices, that needs to be reduced! Here’s what I did: First, measure out your 2 tablespoons of orange juice and 2 tablespoons of lemon juice and pour them into the measuring cup you’re planning on using for your oil, like this:

This should come to about 1/4 cup. Then, slowly pour the oil into the measuring cup until you have 1/2 cup of liquid, like this:

Not difficult at all!

3. Mix together in a large bowl the cake mix, eggs, and oil/juice mixture until completely combined. Because of the juices, the batter has more of a cake batter texture than a cookie dough texture, so it’s not as easy to work with, but still worth it!

4. Drop by rounded teaspoonfuls onto a greased cookie sheet and bake 8-10 minutes or until brown around the edges. Hopefully they’ll look like this:

My friends told me they loved them, so I guess they’re pretty good! You can try this with any cake mix (though I would omit the orange and lemon juice and use the original recipe) to make any flavor cookies you desire. I thought the lemon was nice and refreshing for summer! I hope you will give this a try, and let me know how it turns out!
