Recipe- Corn & Black Bean Summer Salad

Hey Cats!

Happy Tuesday! I skipped Monday’s Musing’s yesterday, as you may have noticed. I wrote one, but then I decided that I didn’t like it, so I didn’t post it. But I’ve been super excited about sharing this recipe, so here it is!

I signed up to make a side dish for my 4th of July party before I really thought about what I would make. So naturally, I called my mom and asked what she thought people would like, because no one wants to bring that thing that no one else eats. She suggested this yummy corn and black bean salad that she had made for my graduation party a few weeks ago, and I was on board!

Here’s what you’ll need:

-1 can black beans

-1 cup frozen corn

-1/2 cup fresh cilantro, chopped

-1 chopped green bell pepper

-1/2 purple onion, diced

-1/2 cup grape tomatoes, halved or quartered

-2 tbsp olive oil

-juice of 2 limes

-salt

-garlic powder

-1 avocado, diced

Here’s what you’ll do:

1. Rinse and drain the beans, and microwave the corn for about 30 seconds, until defrosted but not cooked.

2. Next, in a large bowl, toss together all the ingredients except the olive oil, lime juice, salt, garlic powder and avocado.

3. Then, mix together the olive oil, lime juice, salt, and garlic powder in a small bowl.

4. Drizzle the dressing over the veggies, and toss to coat.

5. Leave in the fridge for at least an hour.

6. Right before serving, add the avocado, another squeeze of lime juice and toss again.

7. Enjoy!

How easy is that? You can serve this with chips, or on its own as a salad! I love that it’s so colorful- it makes me want to eat it all. Also, I had some left over, so I spread some hummus on a whole grain tortilla, filled it with the salad, and rolled it up for a great lunch wrap! This is a great healthy dish to take to a party, or just to make for yourself!

Friday’s Five

Hey Cats!

Yay for Friday! This week feels like it’s been so long- even though I had an extra-long weekend. This week had some ups and downs, but it turned out okay in the end! Here’s my five things for this week:

 

1. I’m thankful for a good report from my cardiologist.  As I mentioned earlier this week, I had my annual checkup with my cardiologist Monday. It went really well, and she told me that I was the “poster child” for my surgery. This is such a blessing and always great to hear!

2. This “Which Backstreet Boy Should You Actually Marry?” Quiz. Buzzfeed has done it again. You didn’t think I could go to a Backstreet Boys concert and just mention it once, did you? If so, you obviously don’t know me very well. Anyways, this incredibly accurate future-predictor confirmed what I’ve known all along- AJ McLean is my boy band soulmate. Duh.

3. Receiving my first brand sample ever! I came home to these fabulous Fibi & Clo sandals after a bad day at work, and they turned my frown upside down! Stay tuned for a feature post next week!

4. Birthday parties with friends. Two of the guys in my Bible study have birthdays this week, so Wednesday night we had a little ice cream and cake party for them. I was in charge of bowls and spoons, but I picked up party hats just to add a festive touch, resulting in this very flattering photo of me and my friend Sydnee. It was a great time!

5. This quote that describes me incredibly well. Obviously, I like to hang out with my friends, but sometimes I just like to be by myself! I can always find a craft (or a chore) to entertain myself, and sometimes being with large groups is exhausting and boring.

Party Planning With Paperless Post

Hey Cats!

You may not know this about me, but one of my goals in life is to be the modern “Hostess With the Mostest”. I love entertaining and planning events, whether it’s a small dinner with my friends or a brunch for 150. I’m very particular about even the most minor details, most likely because I believe the quality of the details affect the quality of the big picture. For example, I had my cousins over for dinner this semester, and I set out sombreros and used our most fiesta-like dishes because I was serving enchiladas- let’s be real, they’re 18 year old boys living off of dining hall food- they probably wouldn’t have noticed if I had used styrofoam plates and plastic sporks. But I believe that when you take the time to make an effort and make things a little fancier than usual, it shows your guests that they are important to you and that you’re glad they came.

When my sister asked me to be her MOH, one thing I was super excited about was planning the bachelorette party. Not because it was going to be wild, but because I knew it would take some actual planning and creativity- remember, this is one reason I used to justify buying the big Lilly agenda. Well, when the time came to send invitations, I was faced with a big decision- paper or online? I wanted to send them via snail mail, but time constraints prevented that (my bad). I was hesitant to send invites via email, because I’ve received some that were a little…unimpressive. And after all, doesn’t the first impression you have of an event come from the invitation? However, my sister had raved about Paperless Post, so when I was home for Thanksgiving we logged on and all of my preconceived notions about e-vites were shattered.

I was very impressed by the selection and variety of invitations Paperless Post had to offer. There are so many options for every occasion, including designer options such as kate spade new york, Jonathan Adler, and Oscar de la Renta. There are a plethora of free options for party planners on a tight budget, but if you find a design that isn’t free, it actually isn’t that expensive! You can buy and earn coins, each worth about 20 cents, and most cards range from 2-5 coins, and extras such as fancy envelopes, liners, and stamps are 1-3 extra coins each.

We settled on this fun, glamorous card from kate spade new york:

Next, we typed in the details and chose the envelope, liner, and stamp, which could not have been easier! Then we entered in the email addresses of all the guests, and they were off! The site also makes it easy to keep up with who has RSVP’d and received the invitations, which was quite helpful!

Paperless Post is a wonderful service for the modern-day “Hostess with the Mostest”. It’s simple and inexpensive, but also quite impressive! I will definitely be using it the next time I throw together a soiree.

Outfit of the Day-Bachelorette Party!

Hey Cats!

My cousin’s bachelorette party was this past weekend, and it was a blast! We stayed in a precious hotel in downtown Dallas and had dinner and a lingerie shower. It was fun, but not too crazy, which was perfect! I was really excited to wear “going-out clothes”, since I don’t get to go out when I’m home.

This navy skirt is one of my favorites! It’s BCBGeneration, and it’s the perfect going-out skirt! I paired it with this top from Loft, and my favorite wedges (they’re old and I couldn’t find them online, but I like these from Steve Madden, these (also Steve), and these from Jessica Simpson). I decided to go with a bold necklace and smaller earrings. I wore the Neely necklace from Kendra Scott with the Morgan studs, also from Kendra. I finished it off with a Lily and Laura bracelet, and my kate spade idiom bangle.
