Recipe- Cream Cheese Strawberry Breakfast Sliders

Hey Cats!

Happy Wednesday! I hope everyone is having a wonderful week. I’m not really sure why, but I’m extra tired this week- I’ve taken a nap after work both Monday and Tuesday- yikes! Definitely going to make sure that doesn’t happen today!

Remember how I said I acquired a sourdough baguette when I went home for my birthday? Well, I found another delicious use for it this weekend, this time for breakfast. I wanted to make French toast with it, but I failed to buy both eggs and milk this week, so that was out of the question. I took inventory of my fridge Saturday morning, and came up with a new fave- strawberry cream cheese sliders!

Here’s what you’ll need:

-1 sourdough baguette (not all of it, unless you’re feeding an army…or a family)

-Cream cheese (I like the whipped kind)

-strawberry jelly

-butter (I use Land o’ Lakes spreadable)

Here’s what you do:

1. First, slice the baguette. Mine was pretty skinny, so my slices were a bit thicker. I used a serrated knife to make it a little easier.

2. On one side of an even-numbered amount of bread slices, spread a layer of cream cheese.

3. On the same number of bread slices, spread strawberry jelly.

4. Sandwich one cream cheese slice and a jelly slice together- repeat until they’re all united in holy breakfast matrimony.

5. Spread a thin layer of butter on each side of each sandwich

6. Place three or four sandwiches at a time in a non-stick skillet over medium heat, and cook for 2-3 minutes on each side, or until brown and crispy.

7. Enjoy!

Recipe- Bagel Breakfast Sandwich

Hey Cats!

Happy Hump Day! I hope everyone is having a great week. I get to go home tomorrow for a late Father’s Day/early birthday weekend for my dad, and I can’t wait!

Breakfast is my favorite meal of the day, and I love finding and coming up with new recipes to try. This past weekend, I decided to get creative with an everything bagel, and if I do say so myself, it was to die for. It’s really simple and only takes a few minutes!

Here’s what you need:

-1 Everything bagel

-1 egg

-cream cheese

-1 slice of ham (or you can use bacon)

-1 slice of cheddar cheese

Here’s what you do:

1. First, toast your bagel. While it’s toasting, prepare your egg in a nonstick skillet prepared with cooking spray. I like mine over-easy, but you could do scrambled if you prefer!

2. While your eggs are cooking, spread a generous amount of cream cheese on the inside of each half of the bagel. Lay the slice of cheddar on the bottom half.

3. Once your egg is finished, slide it onto the top half of the bagel.

4. Place your slice of ham in the skillet, and brown it on each side. Bacon would be absolutely wonderful, but I don’t keep bacon in my house because it only lasts a week- tops. I didn’t want just eggs and cheese, so I improvised with ham lunch meat- classy, I know. But it’s so good.

5. Once the ham is cooked (a little brown on each side), place it on top of the slice of cheese. Put the top and bottom halves together, and you’ve got a delicious, hearty breakfast sandwich!

Wednesday Pins-Day

Hey Cats!

Happy Wednesday! Today’s my first real day at work, and I’m so excited! Yesterday I had training, and it was a long day of videos and quizzes, and I walked out to a parking ticket on my car. Wonderful. But today will be better I’m sure! I’m excited to finally get started on my actual internship and see what I’ll be doing for the summer and the school year!

I skipped Wednesday Pins-Day last week, because I hadn’t really been pinning a lot, but this week I have some great things to share!

First is this recipe for the ultimate sandwich, a toad-in-a-hole sriracha grilled cheese. Yes, you read that correctly. I almost died of happiness when I came across this pin, because it’s a combination of three of my favorite foods- eggs, sriracha, and cheese. I made this for lunch last week and it was one of the best decisions of my life. I used regular sandwich bread instead of sourdough out of convenience, but it was still more than I could have hoped for. Make this- it’s a glimpse of what I imagine heaven to be like.

Next is this travel guide to Austin from my friends at kate spade new york. I have this new obsession with Austin- despite the fact that “that other school” is located there, it’s a very unique city I’d like to explore more. Hopefully that will be a weekend trip this summer! Also, I’m thinking about attending ACL this year, so this would definitely come in handy!
